What to Eat series

It’s cold. It’s the holidays. Shopping centers are busy. Yet we still need to eat.

Here’s what I bought the other day:

dandelion greens
celery

chocolate peanut butter (of course)sourdough english muffins

8 large clams

vegetable broth

pea pasta (I liked it, wife didn’t)

I cut up carrots that I already had, and my dog got the rest off the counter and chowed down (he’s working on his veggie intake). I also diced up some celery and onions. Got the crockpot out and made a soup.

2 diced onions

4 large celery stalks, diced

1 container or vegetable broth

I let it ride in the crockpot for 3 hours on high. I dumped in the box of pea pasta (high in protein, so so in taste, so you can use regular or brown rice pasta), and in 10 minutes the noodles were soft and soup was ready. I cut off pieces of rotisserie chicken, mixed in and served.

The soup made for great lunches.

The next night, I took out the clams (be sure to rinse), and I put them in a pan and covered them 1/2 way with the soup broth and let simmer, covered. They are done when the shells open up completely. Take them out right away. I served it with romaine salad and dandelion greens. When the clams were done, I put the dandelion greens in the broth, wilted, and took out. I drizzled a little pear balsamic over the top. A good heart winter meal img_0794img_0795
